In the next step, you enter the ingredients from the database. For each ingredient, you fill in the details page with the general information and the measured allergen values.
Details;
Enter the name of the ingredient, for example:
- Gingerbread
- Chicken thigh
If necessary, enter a description.
Allergens
In this tab, enter the values for the raw material for each allergen.
Please note: The value for Gluten is calculated based on the values of your gluten-containing grains (usually Wheat, Rye and Barley).

For an allergen, work through the columns from left to right. Depending on your selection, some columns will be editable.
You can choose from the following options:
For each allergen, select one of the options: absent, present or may contain.
- Absent: This is the default value for a raw material. The allergen is not present in this raw material. You do not need to fill in the rest of the columns.
Present: The allergen is (naturally) present in this raw material. You are required to fill in the Protein content:
- May contain: These are the cross-contaminants in your raw material. You are required to fill in the type of contamination; this can be:
- Homogeneous: You fill in the PPM cross-contamination.
- Particulates/Point contamination: You enter the Particulate weight (g) and the Particulate protein content (%).
- Homogeneous: You fill in the PPM cross-contamination.
Once all allergen values have been entered, save the changes.
Timeline tab
Note any changes or adjustments in the timeline. You can post messages or add an attachment to support the raw material.
Duplicating raw materials
It is possible to duplicate existing raw materials. Click on ‘Duplicate’ under ‘Actions’ on the right-hand side to copy the raw material into the database.
